Thai fish cakes
2cm length lemon grass
1 large clove garlic 1st Ingredients
1 cm cube ginger Finely chop or puree these,
1cm cube red chilli -finely chopped will give a crunchier texture
Dessert spoon chopped onion
½ tsp sesame oil
Juice ½ lime
1 tblsp fish sauce 2nd Ingredients
1tblsp light soy sauce Add to first ingredients and blend
100g salmon
100g cod
50g prawns
1tbslp sesame seeds
Vegetable oil
Method
Depending on the texture you want, puree or finely chop the first set of ingredients. Mix together with a little vegetable oil and taste, add more chilli if desired.
Skin and roughly chop fish pieces. Add to blender with other 2nd ingredients and 1st mix. Blend together.
Lightly toast sesame seeds in a dry frying pan. Put mix into a bowl and stir in sesame seeds. Shape fish patties into round pancake shapes, approximately 1cm thick and about 5-6cm across, or around the width of a teacup.
Heat a little oil in a pan, and fry fishcakes for around 30 seconds to 1 minute either side, or until cooked. (They wont take long)
